Red Pesto Halloumi Pasta

A delicious red pesto pasta with crispy halloumi chunks

1 Jar red pesto
200g Pasta of choice
60g Sweetcorn
1 Block halloumi
180ml Milk
Seasonings to taste, chilli flakes and basil recommended


1. Cut up haloumi into small chunks and add to a pan with oil over medium heat to cook while you complete step 2
2. Add salt and water to pan, bring to boil and cook according to package instructions
3. If you wish for crispy halloumi, take out of pan and leave on side plate when crispy. Otherwise continue with next steps with halloumi still in pan
4. Add the red pesto, milk, sweetcorn and seasonings to the halloumi pan, using the milk to clean out the pesto jar before adding
5. Leave to simmer until the pasta has finished cooking
6. Add the cooked pasta and side plate of halloumi (if applicable) to the sauce and serve
